I
became fascinated with
the concept of the "Mongolian Grill" some years back on
a trip (believe it or not) to the Midwest. I went back many times,
lured by the taste and experience of what I imagined to be the cooking
secrets of an entire empire. The hissing of the grills, the scent
of fragrant garlic, the cloudy olive oils, the rich colors of FRESH
foods on display. The idea was so simple. I was also taken by the
social atmosphere that occurred naturally as guests queued up to
the grills, the heart and soul of the restaurant. It might have
been like this, I thought, if you'd been born eight centuries earlier.
My
vision for the Song Mongolian Grill would be warm and welcoming,
like a world headquarters for conversation, with private tent-like
booths, simple, exciting and beautifully-prepared foods in the company
of crisp wines, icy cold cocktails and luxurious desserts.
No need to tinker with perfection!
One trip to the Grill and you will understand why I kept going back.
Mongolia borders China, but the food is NOT typically chinese. What
may be NEW to you is the style and presentation of the Mongolian
Grill, the Sauces, and some of the flavors and spice combinations
that give it such exacting personality. I like to call it "feel
good food."
